cacao banana nut bread
1 cup organic flour
1 cups organic whole wheat flour
*1/4 cup ground cacao nibs
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 cup chopped walnuts
1/4 teaspoon nutmeg
1/2 cup coconut yogurt
1 1/2 cups mashed bananas
(about 5)
1 cup organic sugar
1/2 cup olive oil

In
a mini food processor, grind cacao nibs to desired consistency.
Combine
yogurt, bananas, sugar and apple sauce with mixer. Mix well then add flour, whole
wheat, cacao, baking powder, baking soda, salt, cinnamon and nutmeg. Stir until
mixed. Fold in nuts.
With
non-stick cooking spray, spray bread loaf pan. Spoon in bread batter evenly. Crumble brown sugar over the top.
Bake
at 350 degrees for roughly 1 hour. Cover the top of the pan with foil the last
15 minute to prevent the top from over browning. Once baked remove from oven and cool in pan
for at least 10 minute before serving.
Note: You don't have to smother it with Earth Balance® butter like I do. That's just how my mom did it when we were kids and I can't seem to shake the habit. So be smart, don't start ;)
