2 cups brown rice
1/4 cup lime juice
1 cup cilantro, chopped
1 can organic black beans
1/2 cup organic vegetable broth
1 teaspoon chili powder
1 organic orange bell pepper, seeded
and chopped
1 can organic corn
2 organic tomatoes, chopped
1 bunch organic green onions, chopped
Cook
brown rice according to package instructions. Once rice is cooked, stir in lime
juice and cilantro. Set aside.
Heat
beans in a medium pot with vegetable broth, chili powder, and bell peppers.
To
serve, place a generous amount of rice on the plate, followed by a spoonful of
beans and topped with a layer of corn, tomatoes, and green onions. Serve with
fresh salsa and guacamole.
