coconut cookies
1 1/3 cup organic flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup organic sugar
1/2 cup brown sugar
1/2 teaspoon organic vanilla
1 3/4 cup shredded coconut
2-4 tablespoons of coconut yogurt
2-4 tablespoons of coconut yogurt
1 cup vegan chocolate chips
(optional)
Preheat
the oven to 325 degrees in a kitchen mixer, mix all the ingredients until
smooth. Drop tablespoon sized balls onto a cookie sheet. Bake for 13-15
minutes or until cookies start to slightly brown around the edges.
