rainbow salad
1-2 cups cherry tomatoes,
halved
4-5 large carrots, peeled and
shredded
1 yellow zucchini, thinly
sliced
1-2 firm avocados
1/4 head of red cabbage, finely
chopped
6-10 radishes, thinly sliced
1 head romaine lettuce, chopped
2 handfuls spinach, chopped
Chop
up the veggies and place them in rows on a bed of greens (chopped romaine, spinach
and baby kale). Serve chilled.
