zucchini bread
1/2 cup melted coconut oil
3/4 cup organic sugar
1/2 cup coconut yogurt
1 teaspoon vanilla
1 cup organic shredded zucchini
1/2 cup dried cranberries
1 1/4 cup organic whole wheat flour
2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
1/3 cup chopped walnuts
In
a mixer combine the coconut oil, sugar, yogurt, and vanilla. Beat until the mixture is
creamy. Add the zucchini and cranberries. Gently blend. Add the remaining dry
ingredients and mix until the dough has thickened.
Pour
batter into a bread pan and bake at 350 degrees for 50-60 minutes.
